Lisa Hayden-Miller, chef, former restaurant owner, caterer, cooking teacher, sailor, and world traveler has written a delightful and delightfully clever cookbook. Galley Guru is packed with simple recipes that bring out the best flavors from even the most meager provisions while minimizing time spent in the galley. “Believe this:” Hayden writes, “It is no more difficult to bathe a few vegetables in extra virgin olive oil and garlic and fling them under the grill than it is to open a tin of readymade beef stew.”
Any sailor who has tried to cook when the boat is rocking and rolling will appreciate how each recipe is categorized with a symbol to indicate ease of preparation based on motion and sea-state. In addition to a standard alphabetical index, there is an additional index separating the recipes according to “heavy seas,” “under way,” “beam reach,” “remote anchorage,” and “shore power” (when the boat’s not moving at all).
For those who venture to foreign shores, some recipes include ingredients available only overseas (or by mail order) and many can be made without refrigeration. To be sure, the book includes quite a few unusual and imaginative dishes, but as Hayden-Miller herself says, “If you’d wanted to stay home and eat what you were used to, you would be on that couch right now with the rest of the tubers.”
That Lisa Hayden-Miller is not just a chef is evidenced by the personal sea stories liberally spiced throughout the book. These cleverly-written anecdotes prove one more thing about the author: she is as much a connoisseur of words as she is of fine food.
